Pancakes for breakfast, lunch and undoubtedly dessert?
I don’t mind.

There’s something unashamedly wonderful about the versatility of fried flour batter and the glorious ways to prepare it.

If, like me, in the recent years you’ve found yourself too pressed for time to get creative with pancakes and – like today – didn’t get a chance to go all out, don’t just settle for the basic lemon + syrup combo and call it a day; push the celebration to the weekend and give yourself time to pull out the stops!

So, for dessert lovers and pancake fans everywhere, here are some of my favourite pancake recipes sourced from the ÒRÉ Pinterest.

Blueberry Almond Protein Pancakes

Low carb and gluten free, yet will satisfy your cravings for pancakes in a healthy way (Serves 2)!
Ingredients:

  • 1 banana mashed
  • 1 egg
  • 1½ tablespoons almond meal
  • 1 tablespoon almond butter
  • 1 tablespoon vanilla protein powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon almond extract
  • ½ cup blueberries
  • coconut oil or vegetable oil
  • maple syrup

Scottish Pancakes.

Tall and fluffy (Serves 4)!
Ingredients:

  • 200g (1-1/2 cups plus one tablespoon plus two teaspoons) all-purpose flour
  • 1 tablespoon baking powder
  • pinch of salt
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 300 ml (1-1/4 cups) milk
  • butter for pan
  • honey or maple syrup
  • fresh berries

Peanut Butter Cup Pancakes

Fluffy buttermilk pancakes with peanut butter cups mixed in, topped with a peanut butter whipped cream and drizzled with homemade chocolate sauce… (Serves 3)
Ingredients:

  • 1½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg, beaten
  • 1⅓ cups buttermilk
  • ¼ cup butter, melted
  • 2 tablespoons creamy peanut butter
  • ½ cup mini Reese’s, each one cut in half, plus extra for garnish

Butter for cooking pancakes

  • Peanut Butter Whipped Cream
  • ½ cup heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1½ tablespoons creamy peanut butter
  • ½ teaspoon vanilla extract

Chocolate Sauce

  • 6 ounces chocolate chips
  • ⅔ cup heavy cream

Apple Gingerbread Pancakes with Apple Cider-Maple Syrup

A double dose of apple; shredded apples in the pancakes, and apple cider in the syrup (Serves 10)
Ingredients:

  • 2 apples, peeled and cored (I used honey crisp, granny smith good too)
  • 2 1/4 cups all-purpose flour or white whole wheat (which is what I used)
  • 1/4 cup firmly packed brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 1/2 cups buttermilk or whole milk
  • 1 tablespoon molasses
  • 2 large eggs
  • 4 tablespoons unsalted butter melted, plus additional for cooking

Syrup

  • 1 cup apple cider or apple juice
  • 1 cup pure maple syrup

Lemon Ricotta Poppy-seed Pancakes with Blueberry Sauce

Light and fruity..
Ingredients:

  • 1¼ cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup part-skim ricotta cheese
  • 1 large egg
  • 2 large egg whites
  • ½ cup lemon juice
  • 1 tablespoon canola oil
  • ½ tablespoon poppy seeds

For the Blueberry Sauce:

  • 1½ tablespoons fresh lemon juice (about ½ lemon)
  • 2 teaspoons cornstarch
  • 2 cups blueberries
  • ¼ cup sugar
  • 2 tablespoons water
  • ¼ teaspoon salt
